Deliciously Fluffy Ube Pancakes: A Colourful Twist on Breakfast

Ingredients (makes 8–10 pancakes)

  • 1 cup all-purpose flour

  • 2 tsp baking powder

  • ¼ tsp salt

  • 2–3 tsp ube powder

  • 1 tbsp sugar

  • 1 cup milk (dairy or non-dairy)

  • 1 large egg

  • 2 tbsp melted butter or coconut oil

  • 1 tsp vanilla extract


Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, sugar, and ube powder.

  2. In another bowl, whisk milk, egg, melted butter, and vanilla extract.

  3. Pour wet ingredients into dry ingredients and mix gently until just combined. Do not overmix; some lumps are fine.

  4. Heat a non-stick skillet over medium heat and lightly grease.

  5. Pour ¼ cup batter per pancake onto the skillet. Cook until bubbles form on top, then flip and cook 1–2 minutes more.

  6. Serve warm with butter, syrup, fresh fruits, or a dollop of whipped cream. Optional: sprinkle extra ube powder on top for colour.
